Milk is a food that contains all the substances necessary for the development, viability, and efficiency of the living creatures in its composition in an almost complete and balanced manner. Cow’s milk is 86.9% water, 3.54% protein, 3.92% fat, 4.93% carbohydrate (Lactose), 0.71% mineral substances, and the remaining part includes other substances. Other substances are gases (Oxygen, nitrogen, carbon dioxide), vitamins, and enzymes. Mineral substances can be counted as phosphorus (19%), potassium (18%), calcium (17%), chlorine (14%), sodium (10%), magnesium (2%) and iron (2 per thousand).
These play an important role in the formation of bones, teeth, blood and some hormones in the body, in the nervous system, and in digestive activities.
Although milk can be processed without spoiling its composition and properties, it can also be used to produce pasteurized daily and sterilized milk, cheese, yogurt, butter by changing its composition, condensing, or fermentation. Production of milk and dairy products is included in milk and dairy products sub-classification within the manufacturing industry and the food sector according to the sector classification of the Ministry of Development.
